FIELD: confectionery, canned food, milk industry. SUBSTANCE: method involves preparing raw plant material and processing it in rotor-type cavitational extractor; packing processed plant product. Raw plant is processed in rotor-type cavitational extractor in aqueous solution of citric acid in extraction chamber with cavitation index of 2.3-2.8, at aqueous solution of citric acid and raw material ratio of (0.3-0.7):1 and pH value of mixture of 2.3-3.66. Processing is carried out at least twice for 23-25 s until ground mass of 1.0-3.0 micron sized particles is produced, said mass having temperature of 68-74 C. Method further involves directing resultant ground mass for centrifuging to centrifugal force field with separating coefficient Fr= 1,900-2,010 for producing liquid phase, i.e., juice containing 1.5-6.0 wt% of suspensions and solid substance, i.e., pectin-containing food fiber. Pectin-containing products may be used as prophylactic food for people of any age.
