FIELD: food industry.
SUBSTANCE: invention can be used in medical practice for the treatment of stress-induced diseases and damage to human organs by radionuclides typical of emissions from accidents at nuclear power plants. The proposed method for processing gourds to obtain pectin-containing compositions involves washing melons, their destruction in a screw machine to the size of chips with the separation of peels and juice. Then the crushed crusts are processed with an ultrasonic disintegrator to the consistency of sour cream. Next, an enzyme mixture is added from 3% solutions of pectinases, the fermentation process is carried out at a temperature of 60°C, the mixture is exposed for at least 30 minutes, dried and sterilized in a fluidized bed dryer or lyophilization unit. After that, it is filled into commodity cells, pharmaceutical compositions are added, covered with a flavouring lacquer coating, the coating is dried and the finished product is fed for labelling.
EFFECT: invention makes it possible to exclude the use of acids and alcohols due to the enzymatic extraction of pectin and to simplify the process line for obtaining pectin compositions for implementing the proposed method.
