FIELD: food-processing and milk industry, microbiology and medicine. SUBSTANCE: method involves defatting, clarifying and cooling lactoserum; after cooling, preliminarily passing lactoserum through sequentially arranged layers of gelled high-acidic H-formed cation-exchanger and gelled high-alkaline OH-formed anion-exchanger or through mixed layer of said ion-exchangers, with following passage through active sorption material, such as macroporous and macronetted commercial high-alkaline cation-exchangers, through which lactoserum with pH value equal to or less than 5 is passed, or macroporous or macronetted commercial high-alkaline anion-exchangers, through which lactoserum with pH value equal to or exceeding 7 is passed. EFFECT: reduced cost of protein extraction process by employing more effective sorption materials and increased content of pure proteins in resultant concentrate. 3 cl, 2 dwg
