FIELD: food industry. SUBSTANCE: invention relates to citrus juice-based drink production technology. Method is distinguished by that citrus fruit are extracted with liquefied nonpolar gas to remove bitter substances from flavedo, after which fruit are treated with preparation obtained from biomass of micromycete Mortierella exigua according to given technology and aged for 2 to 5 h. Fruit are then crushed and mixed with sugar syrup. EFFECT: increased productivity and resistance of drink to separation and eliminated opalescence. 2 ex
