FIELD: food-processing industry. SUBSTANCE: method involves grinding in grinder solid receipt components including fish farce, wheat flour, solid fats, bulb onion, edible salt, semolina, dried milk, egg powder, Guizotia flour, vegetable marrow, preparation obtained by predetermined process from mass of lipid-synthesizing microorganism, selected from certain group, apricot, and sugar; cutting said components and simultaneously introducing liquid fats and water-emulsified or fish bouillon-emulsified gas-liquid extracts of black, sweet and red pepper, nutmeg and cloves; forming cutlets from obtained mass; dusting cutlets. EFFECT: provision for obtaining of base product with improved organoleptical properties, more balanced composition of nutritive substances, and increased content of biologically active substances.
