FIELD: food-processing industry. SUBSTANCE: method involves impregnating raw material with liquefied gas at pressure above atmospheric value, with following releasing pressure to value equal to atmospheric pressure at rate providing freezing of raw plant material; before impregnating, treating raw plant material with preparation produced by sequential extracting of Mortierella bainieri micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, said preparation being used in an amount of 0,5-1•104 mg/t; joining first extract with solid residue; holding for 2-5 hours. Ammonia is used for impregnation. EFFECT: improved quality of product.
