FIELD: food-processing industry. SUBSTANCE: method involves treating beet pulp with open steam having temperature of 125-130 C for 15-20 min; providing hydrolysis of beet pulp with 2.0-2.5% hydrogen peroxide solution for 15-20 min, with following separating of said solution from hydrolyzed beet pulp; extracting pectin substances with water of 5.5-6.0 pH value at temperature 0f 70-75 C; separating extract and condensing it by vacuum boiling until concentrate is obtained. Concentrate may be dried to powdered state. Pectin concentrate comprises 5.0-5.5 wt% of pectin substances at total content of dry substances of 8.0-10.0 wt%. EFFECT: increased efficiency in reprocessing of beet sugar production wastes, improved quality of ready product by reduced color index, increased purity and content of pectin substances. 2 cl, 1 ex
