FIELD: confectionery industry, in particular, methods for creating of counter relief pattern on gingerbread boards for stamped Tulsky gingerbread. SUBSTANCE: apparatus has stamping part made in the form of open vessel with counter relief pattern formed on vessel bottom and including subject and small pattern. Main subject elements of pattern are made in the form of schematizing slots with fine-pattern bracket-shaped or nail-shaped and/or geometric carving formed on slot slopes. Vessel side faces are arranged at an angle of 90-145 deg with respect to vessel bottom. Counter relief subject pattern has type formed by contoured carving process and having depth of 2-10 mm, width of 2-50 mm and side faces arranged at an angle of 45-90 deg with respect to bottom of forming part. Temperature compensation contour is provided along sides of vessel bottom at distance of up to 50 mm from vessel bottom sides. Contour side faces are inclined at an angle of 45-90 deg with respect to vessel bottom. Depth of said contour is greater than depth of counter relief pattern by 2-7 mm. Such construction of apparatus allows color and texture of gingerbread surface to be provided, namely, dark brown color of surface and dark pattern color with distinct lines and faces. EFFECT: increased efficiency and improved quality of gingerbread face pattern. 4 cl, 1 dwg
