FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to methods for making gift gingerbreads with relief surface. One proposes a gingerbread production method involving preparation of raw materials for production, stage-by-stage dough kneading using wheat flour, sugar sand, salt, soda, printing dough pieces with filling in moulds with counter-relief pattern, baking gingerbreads, glazing and packaging, wherein for kneading dough additionally used is vegetable oil, rye dry malt, natural spices - cinnamon, cloves, cardamom, nutmeg, rye flour, and dough is kneaded as follows: melts sugar to caramel state, slightly reliving it, then added to it boiling water, after stirring one adds rye dry marc for not less than 10 minutes, soda, salt, vegetable oil, hand-whole solid spices, rye flour, wheat flour, and gingerbreads are manually made, at the same time immediately after baking for hot gingerbreads white glaze is applied, prepared by beating egg albumen with gradual addition of sugar powder and subsequent addition of lemon juice, wherein glaze is applied by sponge, selecting contours of relief with formation of volume pattern. Dough additive used is either dried ginger roots, or chocolate, or cocoa, or honey. Coloured fragments of the pattern are extracted with food paint with the help of a brush. Filling is either natural jam without preservatives or natural chocolate.

EFFECT: invention ensures improvement of the products manufacture technology with improvement of their quality and taste characteristics, namely preparation of printed gingerbreads with a relief pattern, having exquisite taste, dietary properties and a gift appearance.
