FIELD: wine-making industry. SUBSTANCE: oak chips are irradiated by gamma-quantum beam of accelerated electrons with energy 8-10 MeV (1.3-1.6 J) in the presence of air up to the absorbed dose 100 kGy at relatively low dose of the radiation source 4-5 Gy/s. Then oak chips are irradiated at higher power of the radiation source doses 8-10 kGy/s and process is terminated at the total absorbed dose 200 kGy. The proposed method provides accelerating process for formation and increasing content of aldehydes, acetals, higher alcohols and other valuable substances, lignin destruction, rupture of polysaccharide molecules chain, their conversion to oligo- and monosaccharides, enhanced content of water- and alcohol-soluble substances.
