FIELD: technology of canning industry. SUBSTANCE: method involves preparing raw, its packaging into container in combination with boiled water. Before packaging a preparation is added to boiled water. The preparation is prepared by sequential extraction of biomass of micromycetes Pythium coloratum with nonpolar extractant in supercritical state, water, alkali, water, acid, water, alkali and water and the following combination of the first extract with solid residue. The preparation is taken in the amount 0.2-0.5% by preserves mass followed by sealing and sterilization. Method provides enhancing quality of the end product and to reduce its corrosion activity.
