FIELD: food-processing industry. SUBSTANCE: the invention presents a method of production of the fruit jellies and is dealt with confectionary production. In the production of the fruit jellies the syrup is prepared using sugar, pectin and a water extract made out of a mixture of grass of beggar-ticks, corn stigmata, yarrow, nettle fiery and leaves of plantain major. At dressing the syrup is added with citric acid, sodium lactate and a preparation produced out of a biomass of micromycet of Pythium insidiosum according to the given technology. Then the product is cast, molded, dried, and the finished products are packed. The method ensures production of the fruit jellies with a wide spectrum of its vitaminous activity and an unusually pleasant combination of the organoleptical properties. EFFECT: the invention allows to produce the fruit jellies with a wide spectrum of its vitaminous activity and an unusually pleasant combination of the organoleptical properties.
