FIELD: biotechnology, biochemistry, enzymology. SUBSTANCE: invention relates to method for determination of enzyme activity loss in heat dehydration of enzyme solutions. Method for determination of enzymes inactivation in heat dehydration of enzyme solutions involves applying the solution of enzyme preparation in different concentrations and solution for mimic the process on metallic netting with different size of cells and dried under the controlled conditions modeling the dehydration process. Invention provides selection of optimal indices of the heat dehydration process, stabilizing agents and reducing consumption of enzyme preparation (25.0-50.0 ml of solution) in dehydration of enzyme solutions.
