FIELD: food-processing industry, in particular, equipment for frying of food products.
SUBSTANCE: steam-oil oven has bath 1 having lower part 2 filled with water and upper part 3 filled with oil, roller conveyor 4 driven by two-line chain conveyor 7, heat-exchanger 5 adapted for oil heating and equipped with heat-emitting surface extending through the entire length of oven in accordance with reference pattern of supplying demanded heat to product with unaltered oil temperature, device 6 for measuring weight of product (fish) at oven inlet end and outlet end, product temperature sensor 9, oil temperature sensors 8, valve 10 for controlling steam flow rate in steam pipeline 11, control unit 15 including computing device 12, automatic regulator 13 and actuating device 14 adapted for changing position of steam supplying valve.
EFFECT: reduced time for transition to oven novel operation mode in accordance with changing properties and weight of product delivered into oven and, accordingly, improved quality of products.
