FIELD: frying systems.
SUBSTANCE: frying system (100) essentially includes a frying bath (108A) containing frying agent. The frying bath (108A) may be supplied from two or more oil containers (104A, 104N) to form a desired mixture of different oils from the two or more oil containers (104A, 104N). The sensor (124A) may be used to provide data indicative of the frying characteristics of the frying bath (108A). Formation of the mixture may include automatic control based on data received from a sensor configured to obtain measurement information related to one or more attributes of the fryer in the frying bath (108A).
EFFECT: improving the quality of the oil, maintaining the quality of the oil for a longer time, controlling the cost of frying or modifying the mixture due to changes in oil demand.
