FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to equipment for drying and frying of loose products. Unit has a closed main air circuit with a working chamber, a cyclone, an air blower of the main circuit, a heat exchange chamber with an air heating unit and a module for condensation and oil trapping, a filtering element interconnected by means of a closed system in the form of connecting air ducts. Air heating unit is tightly arranged in heat exchange chamber and consists of heat exchanger connected with heating element in form of gas burner and gas outlet of combustion products. In the heat exchange chamber in front of the heating unit there is an oil purification module. Working chamber is arranged on heat exchange chamber. Plant is equipped with an inlet temperature sensor placed between the heating element and the working chamber and a temperature sensor "at the outlet". Plant is also equipped with a cooler with its own air supercharger. Proposed plant comprises loading bucket conveyor at the product inlet into the working chamber and unloading bucket conveyor at the outlet of the product from the cooler. Plant operates in automatic mode using automatic control system.

EFFECT: use of invention provides higher quality of end product.
