FIELD: food industry, biotechnology.

SUBSTANCE: the present innovation deals with obtaining food biologically active additive (BAA) out of fungi applied to restore and strengthen human immune system. The method deals with growing fungi of Fusarium sp. Upon nutritive medium, isolation of biomass against culture liquid. Moreover, fungal strains are chosen out of the row of: Fusarium sambucinum VKM F-26109D, F-165D-VSB-916(PS-64), F-169D-VSB-917, F-3051D, F-3052D, F-8427D, F-199D-52587, F-676D-139C, and before growing one should prepare seeding material. At first, since appearance of a 10th-d-aged Fusarium culture upon potato-carrots agar one should obtain chlamydospores to be applied as an inoculate for preparing macroconidia grown at 3.5 B of must at 27 C for 3 d. The obtained macroconidia should be cultivated under the same conditions for 20 h at obtaining dense mycelium out of small flocculent colonies as seeding material. Biomass isolated against culture liquid undergoes autolysis at 35-45 C at the presence of ethanol to obtain food biologically active additive enriched with new biologically active compounds (BAC). As one variant, ready-to-use biomass is affected by chitinase-containing lytic enzymes. The innovation enables to increase and standardize biomass output up to 12-13 g/l, increase BAC yield and enrich BAA compositions with new BAA, enniatin, in particular.
