FIELD: food processing industry, biotechnology, in particular production of biologically active product from fungi with hepatoprotective action.

SUBSTANCE: claimed method includes culturing of species Fusarium sambucinum fungi on broth containing 3-4 % of carbon source, 0.2-0.3 % of nitrogen source, 0.2-0.3 % of phosphorus source and 0.07-0.08 % of microelements. Culturing is carried out under sterile condition at 26-30°C under stirring and aeration for 48-72 h followed by biomass separation and cultural liquid production. Prior culturing seeding material is prepared by culturing of species Fusarium sambucinum fungi in presence of ethanol. In culturing process in broth 0.5-1.5 vol % of ethanol is added to enhance producing of hepatoprotective metabolites.

EFFECT: new biologically active product enriched with bioactive components (metabolites) and having excellent hepatoprotective action.
