FIELD: food processing industry, in particular bioactive foodstuffs based on milky raw materials.

SUBSTANCE: claimed foodstuff contains culture liquid and biomass obtained by cultivation of fungi belonging to the genus Fusarium sambucinum. As milky raw material cheese or curd whey or defatted milk are used. Finished product ahs humidity of 6.5 % and contains (mass %): fat 10-15, wherein fatty acid composition contains (% based on total fat content): linoleic acid 50-58, γ-linolenic acid 0.2-0.4, α-linolenic acid 0.4-0.7, eicodatrienic acid 0.2-0.35, arachidonic acid 0.4-0.8; proteins 24-25, including amino acids (% based on total protein content) 16-24; lactose 1-3; ash 6-8; and vitamins 500 mg/100 g, including vitamin E 6-8 mg/100 g, vitamin B1 0.6-0.9 mg/100 g, vitamin B2 4-6 mg/100 g, vitamin B3 3.5-6.5 mg/100 g, vitamin B4 250-400 mg/100 g. In one embodiment of present invention target product represents culture liquid separated from biomass and containing 100-800 mg/l of enniatine and enzymes (U/ml): collagenase 100-800, protease 1-2, pectinase 0.4-0.8. Claimed products are useful in prophylaxis of immune deceases, metabolite syndrome, gastrointestinal and liver deceases.

EFFECT: new bioactive food additives with increased content of value bioactive compounds, such as enzymes, polyunsaturated fatty acids, enniatine.
