FIELD: food and agriculture industry.

SUBSTANCE: sea cucumbers (trepangs, Stichopus japonicus, and Cucumaria tricolor) are finished, viscera, crowns and intra-abdominal pellicle are removed and boiled in marine water, fresh water or salted water for 5-15 min in the ratio 1:1 or 1:2 (by mass). Boiling in the same boiling medium of new portions of raw is carried from 3 to 5 times preparing semi-finished product for manufacturing the food production. Ratio index of boiling is selected so to provide amount of dry matter in boiling waters from 4 to 10% and drying thermically treated Cucumaria tricolor is carried out at temperature from 10 to 65oC up to the content of water in product 5-12%, 4-8% of mineral substances to obtain semi-finished product used for manufacturing the foodstuff. Storing dried production is carried out at temperature 20oC, not above, in compartments with air humidity 80%, not above, for 12-18 months. Viscera, crowns and intra-abdominal pellicle of sea cucumber is subjected for draining, light pressing, small freezing, milling and drying at temperature 10-75oC up to the residual water content 5-15%. Product is cooled to temperature of environment air, packaged into moisture-proof packets and stored at temperature 20oC, not above, for 8 months. Prepared fodder biologically active supplement is used as an agent enhancing resistance of animals against infectious diseases as supplement to fodder. Boiling media are collected and dried in drier device of any type at temperature 40-120oC up to the water content 5-12% to obtain biologically active supplement "Akmar" for food. Prepared foodstuff is used as an adaptogenic agent as powder, tablets and in capsulated form. Biologically active supplement "Akmar" represents gray powder with different tints of brown color obtained from dried waters in complex processing of sea cucumbers and consisting of 32.0-42.0% of protein, 5.0-12.0% of water, 50.0-55.0% of mineral substances (calcium, potassium, sodium and magnesium are prevailing elements), 0.05-0.2% of lipids, sum of triterpene glycosides is in the range 5000-7000 mcg/g, and aminosugars - 0.5-2.0%. Fodder biologically active supplement represents yellow powder with tints of brown color obtained from dried viscera and other waste in finishing sea cucumbers and comprises the following components: water, 5.0-15.0%; lipids, 18.0-19.0%; protein, 35.0-40.0%; mineral substances, 30.0-35.0%; amount of glycosides is 5000-6000 mcg/g. This allows the complex utilization of raw with preparing new products.
