FIELD: food industry.
SUBSTANCE: method comprises preparing and washing raw material, grinding and drying. During washing, small prepressing of each specimen is used. After washing, the whole carcasses of sea cucumbers are frozen to a temperature not higher than minus 27°C, and ground in the frozen form to a powdered heterogeneous mixture of ice crystals and sea cucumbers tissue, which is subjected to cryosublimation for dehydrating. The composition of the concentrate obtained includes, wt %: water 7.0-11.0; protein 50.0-85.0; lipids 3.0-6.0; minerals 8.0-32.0; amino sugars 0.5-2.5, and triterpene glycosides - 6000-10000 mkg/g.
EFFECT: manufacuring of food dry concentrate from sea cucumbers with increased biological value.
