FIELD: milk industry, in particular, production of soft cheeses.

SUBSTANCE: method involves providing curdling of pasteurized milk by acid whey; processing resultant cheese mass by self-processing; salting cheese surfaces with dry salt and rubbing with spice mixture. Spice mixture contains spices ground and mixed in equal proportions for producing of homogeneous mass of spice mixture including red pepper, black pepper, coriander, caraway, paprika, khmeli-sunely, and dried garlic, said mixture being used at the rate of 2% of mixture by weight of ready product. Spiced snack cheese of said composition has increased shelf life (of up to 15 days).

EFFECT: improved quality and increased shelf life of product.
