FIELD: food-processing industry, in particular, processing of collagen-containing hydrobiont wastes.

SUBSTANCE: method involves preparing raw material; providing thermal processing and grinding of raw material, with raw material being collagen-containing wastes, namely, scale, skin, bones, which are used in the ratio, respectively, wt%: 0.1:99.8:0.1, 12.5:75:12.5, 25:50:25, 37.5:25:37.5 or 49.0:2.0:49.0; disinfecting or dehydrating raw material before thermal processing; grinding raw material to particle size of 0.08-0.6 mm. Food additive is natural protein component facilitating enrichment of food product with nitrous, mineral and biologically active substances. Jellying collagen-containing substances of scale, skin, bones improve consistency, increase viscosity, formability and moisture-retention properties of basic material in farce products.

EFFECT: reduced norm of usage of raw material in receipt of fish cutlet, sausage, paste and, accordingly, increased yield of ready product.
