FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involves fermentative hydrolysis of wastes of salmon fishes fillet production raw material with Protamex preparation and the hydrolysate inactivation by way of thermal treatment. Protamex preparation with activity equal to 330 PU/g is used in a concentration equal to 0.25% of the raw material weight during 15 minutes. Broth is separated by way of filtration, packed and delivered for storage.
EFFECT: invention ensures production of a broth saturated with peptides, amino acids and low molecular proteins that does not become gelatinised at a temperature of 0 - +5°C.
