FIELD: food industry.

SUBSTANCE: the invention is dealt with the field of food industry and, in particular, may be used in wine industry, alcoholic beverage industry, microbiological industry for production of a food supplement at preparation of beverages of fermentation, nursery and dietary food and foodstuffs. The device contains a chamber made out of a stainless steel and ultrasonic emitters. The chamber is made with a capability of pressurization and through an inlet valve is fused to a system of a gas feeding. Emitters are located on walls of the chamber with equal space between each other. On the inlet of the overflow connecting pipe there is a filter with a capability of a cross motion and on an outlet of this connecting pipe - a shutting mechanism. A compressor is connected to a pressure connection pipe. Emitters also can be installed both on the cover of the chamber and on its lateral surface. The technical result consists in an intensification of the process of a lysis of yeast cultures, an increase of dispersity and homogenization of suspensions, formation of a wide zone of cavitation, increase of biological value of lysates.

EFFECT: the invention ensures intensification of the yeast cultures lysis process, an increase of dispersity and homogenization of suspensions, formation of a wide zone of cavitation, increase of biological value of lysates.
