FIELD: food industry. SUBSTANCE: invention relates to preparing bifidogenic additive used to accelerate growth of fermentation cultures containing bifidum bacteria and also to restore human intestinal microflora when included into food as food additive. Method largely consists of two principal steps: (i) destroying hepatic cells and activating yeast within ultrasonic field and (ii) cleaving protein components of hepatic cells and yeast by enzymes of these microorganisms released into external solution in the course of autolysis. EFFECT: increased efficiency of release of biologically-active components from hepatic tissue. 3 cl, 4 ex
