SUBSTANCE: method involves using mixture of soluble edible salt of polybasic acid and specific preparation produced from Mortierella spinosa micromycet biomass by predetermined process. Said mixture is used for substituting structurizer and emulsifier.
EFFECT: reduced consumption of structurizer and emulsifier.
