FIELD: production of saponin-containing emulsifier for foodstuffs.
SUBSTANCE: claimed method includes preparation and extraction of udo (Aralia mandchuricca) roots with liquid ammonia. When extraction pressure in extraction mixture if periodically decompressed to provide ammonia boiling and increased up to starting value. Further liquid phase is separated and extractant is distilled to produce target product.
EFFECT: decreased energy consumption.
