FIELD: food-processing industry, in particular, equipment for thermal processing of food products.
SUBSTANCE: apparatus has horizontal cylindrical oven, feeding pipes located inside oven on its opposite sides and equipped with nozzles, discharge pipes, heat-exchanger connected with oven bottom part and with nozzles so as to define circulation line, circulation pump, reservoirs adapted for storage of condiment aqueous solution and filled with inert gas, pressurized air source, vacuum pump, temperature controlling and oven pressure controlling section for injecting from nozzles directed to oven center of condiment aqueous solution, hot or cooled water in accordance with software set in control section. Apparatus has four reservoirs adapted for storage of condiment aqueous solution, hot water, collected water condiment aqueous solution and cooling water. Outlets of reservoirs are connected to suction side of circulation pump and inlets are connected to water supplying source.
EFFECT: provision for direct processing of raw materials and preparing of canned foods preliminarily subjected to thermal processing.
