FIELD: food-processing industry.
SUBSTANCE: method involves preparing fruit pulp by straining raw material without separating wastes and decanting; mixing centrifugate with sediment and solid residue produced after extracting of Pythium irregulare micromycet biomass with the use of non-polar extractant, water, alkaline, water, acid, water, alkaline, and water; providing repeated decanting process; introducing into resultant centrifugate extract produced after first extraction of the same biomass with non-polar extractant in above-critical state; heating; packing and subjecting to thermal processing for obtaining of base product.
EFFECT: provision for obtaining of base product having color of basic raw material, with improved breaking resistance throughout the entire guaranteed storage time.
