FIELD: food processing industry, in particular method for production of soft caramel.
SUBSTANCE: soft caramel is prepared by blending and boiling down of sweetener, plasticizer, emulsifier and structure-forming agent. Preparation obtained from biomass of Pythium coloratum micromycete according to claimed technology is used as emulsifier and structure-forming agent.
EFFECT: decreased consumption of processing additives.
