FIELD: food processing industry, in particular cannery industry, production of half-finished garnish potato.
SUBSTANCE: claimed method includes potato washing, inspection, treatment with preparation obtained from biomass of Mortierella gamsii micromycete according to claimed technology, peeling, post-peeling, roasting, pre-packing in vacuum, sealing and pasteurization. Then potato is conditioned for approximately 5 hours.
EFFECT: garnish potato of improved organoleptic properties.
