SUBSTANCE: claimed method includes application of mixture of soluble food-grade salt of multibasic acid with preparation obtained from biomass of Mortierella globalpina micromycete according to claimed technology which is simultaneously used as emulsifier and structure-forming agent.

EFFECT: decreased consumption of emulsifier and structure-forming agents.
