FIELD: biotechnology, dairy industry.
SUBSTANCE: ferment promoter based on lactic acid bacteria contains nitrogen-containing substance in amount of 50-90 % based on promoter mass, and buffer mixture to obtain pH from 5 to 7 corresponding to activity of lactic acid bacteria being in contact with the abovementioned promoter. Buffer mixture represents mixture of carbonates, preferably calcium carbonate and magnesium carbonate. Milk product is obtained by ferment contacting with said promoter, producing activated ferment, milk medium fermentation and incubation in sufficient condition to produce desired product.
EFFECT: stable and effective process for milk product manufacturing.
