FIELD: food-processing industry.
SUBSTANCE: method for producing of fat-containing powdered milk involves preparing liquid milk; feeding prepared liquid milk to evaporator through at least one stage for producing preliminary concentrate having total dry substance content below 50 wt%; homogenizing preliminary concentrate at total dry substance content of from 20 wt% to 50 wt%; providing further evaporation of preliminary concentrate through at least one stage for producing of concentrate with total dry substance content of at least 50 wt% and spray drying resultant concentrate.
EFFECT: reduced viscosity of concentrate upon homogenization to thereby improve quality of ready powdered milk.
