FIELD: food-processing industry and canned food industry.
SUBSTANCE: method involves preparing raw material by traditional process; sieving sugar and directing through magnetic catcher; solving in water and filtering; extracting dry Mortierella sepedonioides micromycet biomass with the use of non-polar liquefied gas such as carbon dioxide or nitrous oxide and separating mycelium; sequentially extracting biomass with water, alkaline, water, acid, water, alkaline, and water; introducing resultant solid residue into sugar solution in an amount of 0.06% by weight of fruits; mixing sugar solution with fruits in receipt amount and dispersing mycelium in resultant mixture under atmospheric pressure; providing cavitational grinding and sterilization of mixture; separating inedible fruit parts from mixture under aseptic conditions to obtain base product; packing resultant product in consumer containers.
EFFECT: increased efficiency and provision for producing of canned fruit strained with sugar, having increased delamination resistance upon restricted introduction of ultrasonic vibration energy.
