SUBSTANCE: method involves preparing raw by the known technology. Sugar is screened, passed through magnetic trap, dissolved in water and filtered. Dry biomass of micromycetus Mortierella pulchella is extracted with a nonpolar fluidized gas, for example, carbon dioxide or nitrous oxide and micelle is separated. Then biomass is extracted successively with water, alkali, water, acid, water, alkali and water. Prepared solid residue is added to a sugar solution in the amount about 0.06% by fruit mass. Then sugar solution is mixed with fruit in the prescription ratio and micelle is dispersed in the prepared mixture under atmosphere pressure and cavitational milling and sterilization of the mixture occur. Nonedible fruit parts are isolated from the mixture under aseptic conditions and the end product is prepared followed by its package into consumer' containers. Method allows preparing canned fruit "Rubbed through fruits with sugar" possessing enhanced stability against separating into layers at reduced energy consumption of ultrasonic oscillations. Invention can be used in technology of preserving industry for manufacturing canned fruit "Rubbed through fruits with sugar".
