FIELD: food processing industry.
SUBSTANCE: claimed method includes walnut grinding without preliminary treatment up to nut decomposition; extraction with sunflower or olive oil for 7-8 h at 80-90°C in ground nut mass/oil ratio of 40:60. Then extraction is carried out, residual matter is washed on filter with 96-98 % ethanol solution. Ethanol is removed by evaporation at 80°C and product is added to oil extract.
EFFECT: accelerated and continuous method.
