FIELD: food industry.
SUBSTANCE: invention relates to the technology of producing natural food dyes and can be used in order to produce the brown dye from the plant raw material. Method for the dye preparation is described, which comprises grinding the pericarp of the Manchurian nut, its extraction using water, and the filtrate separation, where the pericarp of the Manchurian nut is crushed up to the particle size of 0.2–0.5 mm, extraction is carried out using ultrasound at the frequency of 39.6–48.4 kHz for 30 minutes at a 1:5 hydromodule, after separation the filtrate is subjected to freeze drying, the product obtained is ground to a powdery state.
EFFECT: effective method for obtaining the dye with a high content of coloring substances has been developed.
