FIELD: food industry.
SUBSTANCE: invention relates to alcohol-free industry, in particular to production of beverages based on natural herbal extracts, biologically active compounds of which have antioxidant action on human body. Alcohol-free beverage of antioxidant action contains as a base a vegetal extract of a composition of wild herbs of the North Caucasus region, including common bilberry leaves, Persian walnut leaves, black currant leaves, common oregano herb, common thyme herb, as well as sugar syrup, citric acid, natural preservative dihydroquercetin in the following ratio of initial components per 1 dm3 beverage: herbal raw material extract, dm3, – 0.6; dihydroquercetin, g, – 0.025; prepared drinking water, dm3, – balance, at that ratio of vegetal raw materials and blending materials by 1 dm3 extract is: common bilberry (leaves), g, – 60; Persian walnuts (leaves), g, – 15; black currant (leaves), g, – 10; common oregano (herb), g, – 5; common thyme (herb), g, – 10; sugar syrup, dm3, – 0.1; citric acid, g, – 2.0.
EFFECT: invention ensures production of an alcohol-free beverage of increased nutritive and biological value, having pronounced antioxidant properties, and also expands the range of alcohol-free beverages of functional purpose.
