FIELD: food-processing industry, in particular, preparing of garnish potato.
SUBSTANCE: potato tuber baked in foil has layer under skin, which is in state corresponding to that of tuber flesh at the moment tuber baking process in oven is terminating. Foil edges with edges of skin and layer under skin are laid onto tray edge along its entire perimeter. Depression is formed in top part within crushed potato tuber flesh, with edges of depression being arranged within limits not exceeding perimeter of disposable tray. Potato tuber has weight not in the excess of 170 g, and layer under potato tuber skin is 1-2 mm thick.
EFFECT: improved quality of product and reduced time for preparing this product.
