FIELD: food industry.
SUBSTANCE: invention relates to food industry and public catering and may be used for sweet potato tubers side dish preparation. Proposed is a method for the preparation of a food product which is a side dish of sweet potato tubers, in which sweet potato tubers are peeled, cut into pieces, boiled until soft, pureed with a blender, adding yacon flour, butter, grated young Ossetian cheese, yolk of quail egg, salt and pepper, stirring, the resulting thermal mass is put into a confectionary bag with a shaped nozzle and extruded in the form of shaped roses onto a baking sheet covered with parchment, surface of produced sweet potato shaped rosettes is coated with yolk of quail egg and sprinkled with chia seeds, then baked in oven at temperature 190°C during 10 minutes till golden crust appearance at the following initial components ratio: sweet potato tubers 585 g; yacon flour 15 g; butter 20 g; young Ossetian cheese 50 g; yolk of quail egg 2 pcs; salt 2 g; pepper 2 g; chia seeds 3 g.
EFFECT: invention allows to manufacture a product containing a functional ingredient, extend the range of products manufactured so that to diversify the menu of diabetes patients with healthy nutrition.
