FIELD: milk industry, in particular, production of whey protein concentrates and hydrolysates thereof, as well as milk and other functional products.
SUBSTANCE: method involves collecting whey; providing clarification, pasteurization, cooling, demineralization, ultrafiltration for producing of whey protein concentrate; exposing whey protein concentrate to hydrolysis at temperature of 41±2 C and pH of 9.0±0.2. Acidity regulator used in the process is alkaline fraction of electrically activated water having pH value of 11.0-12.0. Hydrolysis process is carried out during 14-24 hours until desired hydrolysis extent is achieved.
EFFECT: improved biological properties and enriched amino acid composition of whey protein concentrate produced by said method.
