FIELD: milk processing industry. SUBSTANCE: whey is clarified, pasteurized and cooled. Then it is affected by microfiltration and by diafiltration. The latter process is carried out till ash content is 0.6-0.75 % and till conductivity is not more 19,0-23,0 Ом-1·м-1. Demineralized whey is heated to temperature being not higher 50 C. Ultrafiltration is carried out at said temperature till content of dry compound is 15-17 %. Thus prepared concentrate is pasteurized. EFFECT: improves efficiency of the method.
