FIELD: biotechnology.
SUBSTANCE: protein solution is prepared from dry whey protein concentrate. The protein solution is pasteurised at a temperature of 85°C with the exposure of 20 seconds and cooled. The pH is set to a value of 7.5-8.0 by adding a 5% aqueous solution of potassium alkali hydroxide. Enzymatic hydrolysis is carried out with the preparations "Protamex" or "Alcalase" at a temperature of 40-55°C for 4 hours. The hydrolyzate is ultrafiltered to obtain the concentrate and the filtrate to a mass fraction of solid particles in the concentrate of 20-22%. The membranes have discharge capacity of 10 kDa. The hydrolyzate is concentrated in a vacuum evaporator installation, pasteurised at a temperature of 70-80°C for 30 s and dried on the spray dryer.
EFFECT: invention enables to obtain a product with increased biological value, reduced potential allergenicity, which enables their use in hypoallergenic products.
