SUBSTANCE: method for making an enriched whey protein concentrate includes purification of curd or cheese unsalted whey, heating, thermocoagulation of proteins, isolation of coagulated proteins, cooling, partial removal of whey permeate, introduction of a starter of probiotic microorganisms, clot fermentation, self-pressing of a hydrolyzed protein clot, filtration, concentration, freezing, drying, characterized in that magnesium chloride is used as a coagulant in an amount of 4 g/l, thermocoagulation of proteins is carried out at a temperature of 98°C, and a 4-strain microbial consortium of Lactobacillus curvatus LCR-111-1, Lactobacillus plantarum 8RAZ, Lactobacillus fermentum 44/1 and Lactobacillus paracasei k-406 in a ratio of 1:1:1:1 is used as a starter for probiotic microorganisms.
EFFECT: invention allows to increase the yield of the product, to increase the biological, functional, nutritional value, to obtain a hydrolyzate with a high degree of hydrolysis.
