FIELD: food engineering.

SUBSTANCE: coffee machine has brewing chamber adapted for accommodation of cassette with powdered coffee, at least one device for piercing of cassette with powdered coffee, and pump for feeding of hot brewing water into brewing chamber. In order to avoid formation of foam on beverage surface, coffee machine is equipped with device for restricting amounts of water fed by pump into brewing chamber per unit of time. This device enables brewing water to flow through cassette substantially without action of pressure. Bottom of cassette designed for such a coffee machine has opening covered with foil which is attached to inner side of bottom. Coffee machine of such construction allows espresso coffee, as well as coffee identical as to its taste to common filtered coffee beverage to be prepared, with coffee surface being free of foam.

EFFECT: increased efficiency, improved quality of coffee and wider range of beverages prepared with the use of such a coffee machine.
