FIELD: food processing industry, in particular production of protein products from plant raw materials.
SUBSTANCE: claimed method includes couching of nut beans in catholyte obtained from 0.5-1.0 % solution of natural bischofite, at pH 11-13 and redox potential from -500 to -800 mV. Further couched beans are freeze dried at temperature from -14 to -15°C and residual pressure of 0.5-1.5 mmHg.
EFFECT: protein product of high quality, long storage time and high workability.
