FIELD: food industry.

SUBSTANCE: invention relates to meat processing industry, namely to production of meat minces. Method involves milling meat raw materials and additives, and mixed until smooth. Meat raw material is represented by beef, the additives are represented by the cooled water electrochemically activated solution mixture fraction CH3COONa, NaCl, glycine in control -2.5 2.0 g/l, in the form of anolyte with pH 4.5 ORP +600-+660 MV in amount of 5% to mass of meat, crushed garbanzo flour in an amount of 5 % to mass of meat after extrusion and hydration anolyte with subsequent stirring , cooling, maintenance under cool conditions at temperature +4…+5 °C during 2:00 and storage 11 days at +0-+6 °C.

EFFECT: method enables selecting the object of study of meat raw material-beef, composition of initial solution of salts and electrochemically activated anolyte, determination of parameters of ECHO and indices of the ECHO solution, increases the range of quality of mince after storage under cool conditions.
