SUBSTANCE: following is proposed: a method of producing protein isolate from chickpea raw materials, which involves grinding hydrothermally treated chickpea beans of the desi or kabuli type, defatting the resulting flour to obtain a suspension, separating it by centrifugation, followed by washing with a single volume of distilled water and repeated centrifugation. Then an aqueous suspension of defatted flour is prepared, into which a complex enzyme preparation with a cellulase activity of at least 2,000 units is added. TslS/g of raw materials andβ — glucanase activity of at least 1,500 units.β -GkS/g of raw material in an amount of 1.0–1.5% by weight of the absolutely dry matter of the raw material. Enzymatic hydrolysis is carried out, the fermentolysate is cooled and kept for 1 hour with stirring, centrifuged to obtain a centrate, which is cooled and kept, after which the resulting protein precipitate is washed and dried.
EFFECT: invention provides an increase in the yield of the extracted protein product.
